■What about having an amazing experience of making instant miso soup like Japanese Samurais did back in the day?

Learn from our Nishio’s local guide the exciting history of miso and its making process step by step. You will first make a visit to our miso warehouse which has more than 100 years of history and afterwards, you will learn how to became an expert in preparing instant miso soup using our ingredients straight out from our miso warehouse.


At the beach-side Nekko Juku,(root school) surrounded by nature, you can play all daywhile experiencing a traditional rustic lifestyle. The director Mr. Tani opened a school for developing character and personal progression in 2012. He handles the planning and operation of nature experience courses for children. Currently, Nekko Juku‘s activities center around providing a place to have experiences, while teaching the positive aspects of sustainable living and knowledge of how to use natural resources. This program, you can experience a traditional by wood-chopping, campfire-building,cooking rice in a clay pot, making Japanese dishes and miso soup for your lunch. This program provides a lively experience where you can feel a part of it.

Course highlights

■Experience how to make instant miso soup using soybean miso, a darker and more reddish brown colour miso with a stronger and richer taste than the worldwide known Shiromiso (white miso).

Miso is a traditional Japanese seasoning produced by fermenting soybeans and acclaimed among Japanese people as one of the staple foods which plays an important nutritional role in Japanese culinary culture.

After watching an introductory video about miso production, we will make a visit to the miso warehouse where you will find wooden barrels with more than 100 years of history that are still used nowadays in the production of miso.We will go to our kitchen studio to make a tasting of 3 different types of miso and we will get more familiar with their different flavours depending on their ingredients and their fermentation periods. Afterwards, we will learn how to make instant miso soup using our soybean miso straight out from the miso warehouse. Lastly, we will enjoy a light meal consisted in rice balls made with our delicious local rice and our special soybean miso sauce.
